Mango Ice Cream

My addiction to mango reflects in my posts 🙂 Guess this is my last Mango Recipe for this season (Hoping so as I don’t have any other mango recipes in my archive). Having tried some recipes with mango, I finally tried ice cream.

Mango Ice Cream

Preparation Time : 10 min | Freezing Time : 9 hours | Serves : 3

Recipe Category: Dessert

Ingredients:

Mango Pulp – 3/4 cup

Heavy Whipping Cream -3/4 cup

White Sugar/Brown Sugar/Jaggery/Maple Syrup/Honey – 4 tbsp (I used white sugar)

Milk Powder – 3 tbsp

Milk – 1/3 cup

Method:

  • In a mixing bowl, add the whipping cream and whip it to stiff peaks
  • Add milk powder, sugar and Milk to whipping cream and combine well
  • Add Mango pulp to the mixture and mix well

  • Cover and refrigerate for at least for 3 hrs. Then blend it  and freeze again. Repeat the process after 3 hours to break the crystals. Freeze it for 6 to 7 hours. Better the blending, nicer will be the ice cream texture

Mango Kulfi

I am crazy about mangoes. My third Mango Recipe – never mind. Mango kulfi is one of the best summer desserts made with mangoes.

Kulfi is an Indian version of  ice cream – nuttier and denser than the regular ice cream. Traditionally it is made with thickened creamy milk, but it is time consuming. Lazy me always looking for an easy substitute. Tried using condensed milk and bingo! Delicious Mango Kulfi is ready.

During my childhood days, I remember hawkers with push carts full of creamy kulfi. After hearing their bell sounds, me and my sis will run to buy kulfi. It is so addictive. You can try variations in it, by adding nuts and any fruit pulp of your choice, or even plain milk mixture with nuts also tastes divine.

This is a very easy and quick kulfi recipe ,no cooking is required.

Mango Kulfi:

Preparation Time : 10 min | Freezing Time : 8 hours | Serves : 2

Ingredients: 

Sweetened Condensed milk – 1/2 cup

Pureed Mango – 1/2 cup

Cardamom powder- 1/8 tsp

Vanilla Extract – 1/8 tsp

Mixed Nuts – 2 tbsp,chopped (I used Pistachio, Walnuts, Almonds)

Method:

  • In a bowl, add Pureed Mango and Vanilla extract. Mix well and add Condensed Milk and chopped nuts. Combine everything and fill the mixture in the kulfi moulds (popsicle moulds) or just use any container with a lid.

  • Freeze for about 8 hours.

  • Dip the moulds in hot water to easily unmould the kulfi .

My Notes:

  • The mango I took was sweet, and with condensed milk being added, I didn’t add any sugar. You can add sugar after checking the sweetness
  • Instead of adding condensed milk, you can take 2 cup of whole milk, condense it to 1/2 cup and then use
  • If you do not have a Popsicle mould, you can use disposable plastic cups and skewers

It’s hard to stay away from mangoes during this time of the year, and having a sweet tooth, I couldn’t help but make Mango Halwa. This Halwa is not at all a guilty pleasure. It contains Palm sugar (Jaggery) which has less calories compare to white sugar (Brown sugar can also be used instead).

Mango Halwa:

Preparation Time : 10 mins | Cooking Time : 20 mins | Serves : 2

Recipe Category: Dessert

Ingredients:

Mango Puree – 2 cups

Ghee – 2 tbsp

Palm Sugar – 1/4 cup

Raisins – as needed

Cashew – for garnish

Method:

  • In a heavy bottomed pan, add ghee and saute raisins for 30 seconds. In medium flame, add mango puree and keep stirring for 5 min. Add jaggery and keep stirring. Cook for 15 – 20 mins till it thickens and approaches halwa consistency

  • The key is to switch off before it reaches halwa consistency, as the halwa will thicken a bit after it is switched off. Garnish with cashews

Mango Mousse (without eggs)

Anything with Mango is delicious. I wanted to make mango smoothie but without eggs/gelatin. Had some heavy whipping cream in fridge, so thought of using that.  I have prepared mousse with eggs before, but this was my first attempt with heavy whipping cream. Happy that it came out good! This mango mousse is super easy. Only four ingredients, no gelatin, no eggs and no cooking needed.

Mango Mousse

Preparation Time : 10 min | Freezing Time : 5 hours | Serves : 3

Recipe Category: Dessert

Ingredients: 

Pureed mangoes – 1/2 cup

Heavy Whipping cream – 1/2 cup

Pureed Mangoes (for topping) – 2 tbsp

Sugar – 2-3 tbsp

Vanilla – 1/8 tsp

Method:

  • Mix pureed mango (I have blended mango pulp with 1 tsp of water) and vanilla in a bowl. In a separate bowl, whisk Whipping Cream with sugar for 5 mins and set aside

  • Blend the mango pulp and the whisked cream together. Scoop into serving glass (about half glass)

  • Top it with some pureed mango and refrigerate for at least 5 to 6 hours
