Eggless Pancake

We visit IHOP frequently, and always include pancakes in our order. I wanted to try Pancakes at home, when I checked in YouTube, saw the recipe put up by Joy of baking. Usually I do it in that way. Couple of months ago, I wanted to make pancakes for breakfast but I didn’t have eggs. As always lazy me first thought of doing something else, but after thinking for a while, I made some minor changes from the original recipe and was able to prepare soft, spongy, fluffy pancakes without eggs:) Since then, I have been making pancakes without eggs.

Pancake:

Preparation Time : 3 mins | Resting Time : 10 mins | Cooking Time : 15 mins | Serves : 2

Recipe Category: Breakfast

Ingredients:

All-purpose flour/Maida – 1 cup

Honey/White Sugar/Brown Sugar – 1 tsp (I used white sugar)

Cinnamon powder – 1/2 tsp

Baking powder – 2 tsp

Milk – 1 cup + 3 tbsp  (I used whole milk)

Vanilla extract – 1 tsp

Olive oil/butter – 1 tbsp (for the batter)

Butter –  1 tbsp (Unsalted,  Melted at room temperature)

Method:

  • Combine the dry ingredients and mix slightly. Add milk, butter, water, and vanilla. Whisk together until just combined. Set aside to rest for 10 -15 minutes (I kept for 10 minutes)

  • Heat an iron skillet or a non stick pan and allow to heat for 30 to 40 seconds on low to medium heat. Reduce heat to low and pour a large ladle full of batter in the center of pan. Do not spread the batter. Allow it to spread on its own, pour little butter around the edges. Cook the pancake on low medium minute for half a minute or until bubbles appear over the pancake

  • When the pancake turns a nice golden shade, flip it over and cook for half a minute and transfer to the serving plate

  • Serve warm topped with butter/honey/Maple Syrup/Powdered Sugar/Caramel syrup/butterscotch syrup/Fruit syrup

Mango Halwa

It’s hard to stay away from mangoes during this time of the year, and having a sweet tooth, I couldn’t help but make Mango Halwa. This Halwa is not at all a guilty pleasure. It contains Palm sugar (Jaggery) which has less calories compare to white sugar (Brown sugar can also be used instead).

Mango Halwa:

Preparation Time : 10 mins | Cooking Time : 20 mins | Serves : 2

Recipe Category: Dessert

Ingredients:

Mango Puree – 2 cups

Ghee – 2 tbsp

Palm Sugar – 1/4 cup

Raisins – as needed

Cashew – for garnish

Method:

  • In a heavy bottomed pan, add ghee and saute raisins for 30 seconds. In medium flame, add mango puree and keep stirring for 5 min. Add jaggery and keep stirring. Cook for 15 – 20 mins till it thickens and approaches halwa consistency

  • The key is to switch off before it reaches halwa consistency, as the halwa will thicken a bit after it is switched off. Garnish with cashews

Pesto Pasta

When it comes to pasta, White sauce pasta is my all time favorite. When we where in UK, one of Hubby’s colleague frequently brings Pesto pasta for lunch. After tasting that, Hubby always tells me to give it a try. Recently in our relative’s house, we had this for dinner. After tasting Pesto pasta I regretted why I didn’t try this recipe before. Image Pesto Pasta:

Preparation Time : 15 mins | Cooking Time : 40 mins | Serves : 3

Recipe Category: Entree

Ingredients:

Penne – 1 box (I used 100% whole grain)

Pesto – 3/4 Cup

Zucchini – 1 Small

broccoli – 1

Olives – 1/4 cup pitted

Yellow bell pepper – 1/2, thinly sliced

Spring Onion – 4 strings

Sun-dried Tomatoes – 6

Garlic – 2 pods, peeled and minced

Olive oil – 2 tbsp

Grated mozzeralla and cheddar – 1/4 cup

Salt – as needed

Italian Seasoning/Oregano – 2 tsp

Ground black pepper – as needed

Water – as needed

Method:

  • Preheat the oven to 350F
  • In a large Saucepan, add water and  salt, and let the water come to a boil while you prep other ingredients
  • Place Zucchini, yellow bell pepper and broccoli in a oven tray, cook it for 10 mins in the oven

  • As soon as the water comes to a boil add the pasta, stir and reduce heat to medium. Cook pasta  as directed on the package and drain the pasta

  • Add oil to the pan, When oil is hot, add the minced garlic, and saute for one minute. Then add spring onion and pesto, saute for a min. Add oven cooked zucchini, yellow bell pepper and broccoli and gently stir to combine.

  • Add the drained pasta to the vegetable/pesto combination and gently mix together.  Add grated cheese and switch off.  Serve hot

 My Notes:
  • Instead of preparing pesto at home you can also buy it from store
  • Instead of baking vegetable you can also saute them directly
  • Add any veggies of your choice. Eggplant, peas, corn, spinach, cabbage etc can also be added
  • I have used Penne instead  Rotini or any variety of pasta can be used
  • Instead of spring onion regular onion can also be used

Apple Bagel

Bagel has became part of our Breakfast. Instead of preparing savory using bagel, I wanted to try a sweet version. Had apples in fridge so tried Apple bagel. Apple bagel is easy to prepare and it tasted Delicious.

Apple Bagel:

Preparation Time : 5 mins | Cooking Time : 10 mins | Serves : 2

Recipe Category: Breakfast

Ingredients:

Bagels – 1

Apple – 1/2 small apple, diced

Brown Sugar / White sugar – 1 tsp

Cinnamon –  1/8 tsp

Cheese – 1 tsp (I used Cheddar and mozzarella grated)

Method:

  • Combine Apple, cinnamon and Sugar in a mixing bowl

  • Top each bagel half with apple mixture and spread cheese over apple
  • Bake the bagel halves for 8-10 minutes

My Notes:

  • MICROWAVE DIRECTIONS: Top each bagel half with apple, cinnamon and sugar. Place on microwave-safe plate lined with paper towel. Microwave on HIGH for 1 to 1 1/2 minutes. Top each with cheese. Microwave on HIGH for 1 to 1 1/2 minutes or until cheese is melted and sandwich is hot
  • Adding Sugar is optional
