Cracked Wheat Savory Cake

With my Little one going all around the house, I am finding it difficult to prepare breakfast. So I prefer preparing some light breakfast, or some bread like Wheat Oats Banana Bread. Couple of weeks back, I tried Savory Rava Cake and had them for next day breakfast, and we both liked it. Wanted to do it again, and this time I used Cracked Wheat instead of Rava. Remembering cracked wheat idli!!

Cracked Wheat Savory Cake

Preparation Time : 10 min |  Cooking Time : 45  mins – 1 hour | Serves : 3

Ingredients:

Dry Ingredients:

Cracked Wheat – 1 cup

Peas – 2 tbsp

Corn – 2 tbsp

Carrot – 2 , peeled and grated

Onion – 1, finely chopped

Salt – as needed

Baking soda – 1/2 tsp

Baking powder – 1/2 tsp

Wet Ingredients:

Unsweetened Yogurt/Curd – 1 cup

Water – 3 tbsp

Oil/Butter – 1 tbsp ( I used Olive oil)

Sesame seeds – 1 tbsp (optional)

Cooking Spray / Oil – to grease

Method

  • Preheat the oven to 350 degrees Fahrenheit. Place the parchment paper in baking pan, and grease the baking tray with oil/cooking spray
  • In a bowl, add dry ingredients and mix well, and then add the wet ingredients

  • Pour into baking tray and sprinkle sesame seeds

  • Bake for 35-40 minutes

My Notes:

  • You can also grind the cracked wheat for this
  • Instead of adding 1 cup of curd, you can also add 1/2 – 3/4 cup of yogurt and add 3/4 – 1/2 cup water accordingly
  • Red chilli powder/green chilli can be added to make it spicy
  • Same proportion works for Semollina/Rava cake as well

Cracked Wheat and Oats Adai

After Cracked Wheat Idli, it has been a while since I posted (actually, cooked) anything with cracked wheat.  Thought of preparing Cracked Wheat Pongal and soaked moong dal, and then I realized I had only 1/2 cup of cracked wheat. I soaked toor Dal as well, along with moong Dal, and decided to try Uthappam with cracked wheat, dal and oats (I named Uthappam, as its texture resembled the soft Uthappam). To my surprise, it was a winner and hubby couldn’t believe that I used cracked wheat and made instant uthappam!

Cracked Wheat and Oats Utthapam

Preparation Time : 5 mins | Soaking Time : 2-3 hours | Cooking time : 10 minutes | Serves : 3

Ingredients:

Cracked Wheat – 1/2 cup

Oats – 1/2 cup

Toor dal – 1/4 cup

Mong Dal – 1/4 cup

Fenugreek seeds – 1/4 tsp

Hing – a generous pinch

Oil – as required to grease

salt – as needed

Method:

  • Soak the two lentils, along with cracked wheat, fenugreek and oats for about 3 hours (I soaked in warm water)
  • Drain the water, and Grind,  by adding water
  • Heat the skillet. When it is hot, add a little oil and pour the batter into the skillet

  • After one side is cooked well, turn and cook the other side. Serve it with any chutney. We had with Thakkali Thokku

Eggless Dry Fruit and Nut Cake

After adding walnuts to Wheat and oats banana bread, hubby and I liked the nutty flavour, so thought of trying  a cake with nuts and dry fruit.  I have read that dry fruit and nut cake tastes great when the ingredients are marinated in Alcohol for a day. I wanted to replace alcohol with a fruit juice, and remembered Eggless Mango cake, in which fruit pulp replaced eggs. This time, tried a cake by marinating the ingredients in orange Juice (that’s what I had in the fridge, so used it). I have to thank my dear friend Lori@ creatingbeautyinthekitchen for inspiring me to try a cake without adding sugar. Have used honey and dates syrup instead of sugar. It came out well, no compromises in the sweetness!

Eggless Dry Fruit and Nut Cake

Preparation Time : 10 min | Marination Time : 10 hours | Cooking Time : 40 min

Recipe Category : Dessert/Baking

Ingredients

Whole wheat flour – 1 cup

Baking Powder – 1/2 tsp

Baking Soda – 1/2 tsp

Salt – 1 pinch

Cinnamon powder – 1/2 tsp

Cardamom Powder – 1/2 tsp

Orange juice – 3/4 cup

Mixed Dry Fruits and Nuts – 3/4 cup (I used chopped almonds, walnuts, cashews, cranberries, raisins and apricots)

Honey – 1/3 cup

Dates – 7

Butter – 1/4 cup

Vanilla extract – 1 tsp

Method

  • Soak dry fruits and nuts in 1/4 cup orange juice overnight

  • Preheat oven to 350 degree Fahrenheit. Line the cake tin with parchment paper and grease with butter/cooking spray
  • Soak dates in hot water for 10 minutes
  • Blend the dates by adding 2 tbsp of water (adjust if required)
  • In a mixing bowl, add dry ingredients and sieve it (To ensure even mixing). Add soaked dry fruits and nuts mix gently
  • Add honey, dates puree, butter and vanilla and Mix a gently until combined,Do not over mix

  • Pour this batter into the prepared cake tin and bake for about 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean

My notes:

  • Dates Syrup can also be used instead of Dates Puree
  • Use nuts of your chioce
  • Any fruit juice can be used
  • Every oven differs keep an eye after 35 minutes
  • Sugar can be used instead of honey
  • Any fruit juice can be used instead of orange juice
  • All purpose flour can also be used instead of wheat flour

Cracked Wheat Rava Idli

Sometimes, a dish becomes an accidental hit, and we start liking them to the level where it is included regularly in the menu. To me, Cracked Wheat Rava Idli is one such item. One day I felt like having Rava Idli and when I was about to start, I realized I didn’t have enough Rava at home. Cracked Wheat was in my sight. Though I have tried few recipe with cracked wheat, this instant idli is something which I did not even think about. Followed Rava Idli procedure, except that I used cracked wheat instead of rava. I was actually amazed by its texture and taste. Hubby and I liked this Idli more than Rava idli. It was spongy and tasty, and above all healthy:)

Cracked Wheat Rava Idli

Preparation  time : 10 mins | Standing time : 10 mins | Cooking time :10 mins | Serves: 3

Category : Breakfast

Ingredients:

Cracked Wheat/ Gothuma Rava – 1 cup

Thick Curd/ yogurt – 1/2 cup

Carrot – 1, I chopped in chopper you can even grate them

Water –  1/3 cup

Baking Soda/Eno salt – 1/2  tsp, heaped (I used baking soda)

Salt  – as needed

Mustard seeds – 1/4 tsp

Urad dhal – 1/2 tsp

Chana Dhal – 1/2 tsp

Cashew nuts – as required

Oil – 1/2 tsp + to grease

Method:

  • Add oil to pan. Once the oil is hot, add mustard seeds, urad dal and chana dal. Let them splutter. Set aside. In the same pan, add remaining oil and cashew, and roast them till golden brown and set aside
  • Add Cracked wheat to the pan and saute for a minute, and let it cool. Pulse them in a blender to fine grain (Since the one I had was big, I opted this way. You can skip this if the broken wheat you use is fine grain)

  • Add yogurt, salt, carrot, tempered stuff and baking soda to the cracked wheat powder and mix well. Add water to get the desired idli batter consistency. Let them sit for 10 minutes.
  • Set the idli steamer ready and grease the idli mould with oil. Pour ladle ful of batter to the idli mould and cook for 15 minutes or until done. Serve hot with any chutney/ podi/sambar

Cracked Wheat Pulao

In our home we prefer avoiding rice for dinner, so at least once a week cracked wheat dish will be in my routine menu. My Amma used to make cracked wheat pongal. Inspired by that, I wanted to do something different instead of the usual upma. I had a few veggies at home, so tried this recipe. Cracked wheat pulao is great for breakfast too

Cracked Wheat Pulao:

Preparation Time : 15 mins | Cooking Time : 25 mins | Serves : 4

Recipe Category: Entree

Ingredients:

Cracked Wheat/Dalia/Bulgar – 1 cup  + 1/4 cup

Onion – 1 finely chopped

Carrot – 2 finely chopped

Beans – 10 finely chopped

Potato – 2 finely chopped

Frozen peas – 1/6 cup

Ginger garlic paste – 1 tsp

Coriander Powder – 1 tsp

Cumin Powder  1/2 tsp

Water – 2 cups + 1/2 cup

Coriander leaves  – a handful (optional)

Garam masala – 1 tsp

Cardamom pods – 2

Cinnamon – 1/8 stick

Cloves – 1

Bay leaves – 1

Fennel seeds – 1/8 tsp

salt – as needed

Oil / ghee – 1 tbsp

Method:

  • Add oil/ ghee to frying pan and add whole spices. Add and saute onion with ginger-garlic paste. When the onions turn translucent, add vegetables and saute till vegetables are cooked

  • Add  garam masala, cumin powder, coriander powder, cracked wheat and salt. Let it cook for 2-3 min

  • Add 2 1/2 cups of water and 1 drop of oil/ghee ( My Amma tells me that adding oil/ghee at this stage enhances the consistency of pulao). After the ingredients are cooked, take off the heat. Serve hot with any Raita
