Guacamole Sandwich

When I feel like having a quick breakfast, bread always helps me. Like many, I love sandwiches. Also, guacamole is one dish That can be had in many forms – Sandwich, side dish for roti, Stuffing for burrito/ Quesadilla. This is one healthy, tasty and easy sandwich.

Guacamole Sandwich

Preparation Time : 5 mins | Cooking Time : 5 mins | Serves : 1

Ingredients:

Bread – 4 slices

Guacamole – 2 tbsp

 Method:

  •  Spread the guacamole on one slice and place other slice over it

  • Place it in a greased waffle/ sandwich maker and cook for 2 minutes or as per the sandwich maker’s instructions

 My Notes:

  • Alternate method suggested by my friend – peel and remove avocado seed and cut into big pieces and mash them. Squeeze few drops of lemon and add salt. Spread them over the bread and add veggies of your choice, cheese, salt and pepper. Keep the other bread over it and toast
  • Can also grill them directly in a skillet
  • I used cooking spray, instead you can use butter to grease
  • Can add cheese after spreading guacamole
  • I made the sandwich in a waffle maker, as I like the waffle-shaped bread slices!

Wheat Oats Banana Bread (Eggless)

Ever since I saw my friend Malar’s Oats cookie with banana, I wanted to try that combination in baking. While thinking what to do, I remembered my liking for banana bread in Starbucks, and decided to try banana bread with oats and wheat. I browsed for recipes, and liked this recipe. With few modifications, I prepared this bread and it turned out good! This bread is also yeast-free.

Wheat Oats Banana Bread

Preparation Time : 10 mins | Cooking Time : 50 to 60 mins

Recipe Category: Snack/Breakfast

Ingredients:

Whole wheat flour – 1 cup + 1/2 cup

Powdered Oats – 1 cup

Baking powder – 1 tsp + 1/2 tsp

Baking soda – 3/4 tsp

Salt – as needed

Walnut – 1/4 cup, finely chopped

Cinnamon powder – 1/2 tsp

Cardamom powder – 1/4 tsp

Mashed banana – 1 cup (I used 3 banana)

Honey – 1/3 Cup

Coconut/ olive /cooking oil/butter/unsweetened applesauce – 1/3 cup (I used coconut oil)

Vanilla – 1 tsp

Milk ( Skim/Coconut/Almond/Cashew) – 3/4 cup (I used Skim Milk)

Butter/ Oil/Cooking Spray – To grease

Method:

  • Preheat oven to 350 degrees F
  • Grease a loaf pan with cooking spray/butter
  • In large bowl, combine mashed banana, coconut oil, honey, milk and vanilla and mix well
  • In separate medium bowl, whisk together whole wheat flour, oats, baking powder, baking soda, salt and cinnamon and cardamom
  • Add wet ingredients to dry ingredients, add the chopped walnuts and mix until just combined.

  • Pour into prepared loaf pan. I sprinkled some oats, and baked for 50 – 60  minutes, until toothpick inserted into center comes out clean with a few crumbs attached

Bread Utthapam (Bread Savory Pancake)

Bread utthappam is a great option when you feel like eating utthapam instantly without idli/dosa batter. This recipe for making bread uttapam is easy and quick, as the batter does not need to be fermented, and all the ingredients are easily available at home. Make instant bread uttapam whenever you like!

This bread Uttapam can be made with any type of bread – white, whole wheat or multigrain.

Bread Utthapam (Bread  Savory Pancake)

Preparation  time : 10 mins | Standing time : 10 mins | Cooking time :10 mins | Serves: 4

Category : Breakfast

Ingredients:

Bread –  7  pieces (I used whole wheat)

Thick yogurt/curd – 1/4 cup + 2 tbsp

Coarse rava/ sooji/semolina – 1/2 cup

Rice flour/ All purpose flour – 4 tbsp (I used rice flour)

Water – 1/3 cup approx

Chopped onions – 1/4 cup

Shredded carrot – 1/4 cup

Frozen peas and frozen corn – 1/4 cup

Salt – as needed

Cooking Oil – as needed

Method:

  • Remove the edges in bread and soak it in cold water and drain excess water. Transfer the bread pieces into a blender along with rava, rice flour and curd. Grind everything to a smooth batter. Add water accordingly to get dosa batter consistency

  • Transfer to a bowl and Add chopped onions, shredded carrots, peas, corn and little salt. Mix everything and add water if required. Keep it aside for 10 minutes

  • Heat the skillet on medium heat and spread some oil on it. Pour ladle full of batter and spread it to make a small and thick bread uttapam or pancake. Flip it over and cook till bread uttapam or pancake becomes nice and crispy from both sides. Serve them with your favorite chutney or sauce.

Bread Upma

IMG_5108 Bread Upma is my all time favorite dish. I still remember my childhood days, whenever Amma buys a loaf of bread, she prepares bread butter jam, bread sandwich and bread upma. Amma’s Bread upma is simple and tastes yummy. To give a crispy texture to the bread I have baked the bread and added Checkout my other recipes using bread

Bread Upma: Preparation Time : 15 mins | Cooking Time : 10 mins | Baking time : 14 mins | Serves : 2 Recipe Category: Breakfast Ingredients: Bread – 8 slices (I used wheat bread) Onion – 1, finely chopped Tomato – 1, finely chopped Frozen Green Peas – 3 tbsp Turmeric powder – 1/8 tsp Coriander Powder – 1 tsp Cumin Powder – 1/2 tsp Garam Masala – 1 tsp Sambar Powder – 1/8 tsp Curry leaves -few Salt -as needed Cooking spray / oil – to grease the baking tray (I used cooking spray) Oil – 1 tsp IMG_5107 Method:

  • Preheat the oven to 350 degree F, and place the bread in oven. Bake on both sides (around 7 minutes each and turning the bread in between) or until bread becomes crispy.  Turn off the oven and let the bread stays in the oven

  • In a pan heat oil and when the oil becomes hot, add curry leaves and onion, saute till onion becomes translucent,  then add tomato and cook
  • Once onion and tomato are cooked, add turmeric powder, cumin powder, coriander powder, salt, sambar powder and garam masala and cook for 2-3 minutes

  • Take the bread from the oven;cut into pieces

  • Add the bread pieces to the masala, gently mix until the masala coats well.  Serve hot to enjoy the crispy bread upma

  • Baking bread is optional. You can even toast/ grill the bread
  • Baked Bread upma tastes great if served immediately
  • You can use plain bread and make upma  avoiding baking
  • Ginger garlic paste can be added
  • Usually i temper the upma with mustard seeds and channa dal,  missed doing that, while taking the picture
  • You can bake the bread and keep it in the turned off oven for 45 minutes – 1 hour and  quickly saute the bread with the masala before serving. By doing this way Bread upma will be crsipy instead of soggy texture

Black Bean Sandwich

I had prepared black bean gravy for roti, but there was leftover gravy after dinner. I had kept that in the fridge. Next day morning I tried to make a sandwich with it. Sandwich tasted yummy. From that day I started preparing extra gravy for next day’s breakfast.

Black Bean Sandwich:

Black Bean Gravy – 2 tbsp

Cheese – 2 tsp ( I used mozzarella and cheddar ) optional
