Baked Bread Rolls

In our home both hubby and I like to have Snacks with tea. Though I like deep fried snacks, the calories in them causes some worry! Had half loaf of bread, so thought of trying something with that. I generally bake bread whenever I use them in vegetable biryani, bread upma and other dishes. This time I wanted to keep some stuffing and bake it. Crispy snack is ready, with minimal oil.

Baked Bread Rolls

Preparation time: 5 Minutes | Cooking time:  30 Minutes | Makes : 6 pieces

Category: Snacks

Ingredients:

Bread – 6 slices (I used multi grain wheat bread, but wheat and white bread can also be used)

Oil/Cooking spray – I used PAM olive oil spray to grease and little oil to brush

Potato Masala:

Potato – 2, medium sized

Peas – 2 tbsp

Turmeric powder – a pinch

Fennel(Sombu) powder – a pinch

Ginger garlic paste – 1/2 tsp

Red chilli powder – 1/8 tsp

Garam masala powder – 1/4 tsp

Oil – 1 tsp

Salt – as needed

Method :

Potato Masala:

  • Cut the potato into half and boil the potatoes (I microwaved them for 7 minutes). Peel the skin and mash them (You can use a fork to mash)

  • Add 1 tsp of oil to a pan. Add ginger garlic paste and sauté for 30 seconds. Add onions and saute till onions are cooked. Add garam masala, red chilli powder, fennel seed powder, turmeric powder and allow it to cook for a minute. Add mashed potato and peas, and cook covered for 2-3 mins. Switch off and keep the stuffing aside

Bread Roll:

  • Preheat the oven to 400 degree Fahrenheit
  • Trim the edges of the bread and roll them as thin as you can with a chapathi roller. Add approx 1 tbsp of stuffing in the middle, and seal the edges with little water

  • Take a baking tray and put parchment paper on top. Use some cooking spray on the paper, and brush little oil on  both sides of bread rolls. Bake for 8-10 mins. Turn over and cook for another 8-10 minutes, till the rolls turn golden brown. Serve it with ketchup/ranch

My Notes:

  • The timing differs from oven to oven, so keep an eye after 8 minutes
  • You can add ghee to make them rich
  • Any vegetable of your choice can be added in the stuffing
  • Can grill them instead of baking

Bruschetta

Bruschetta is one of our favorite Italian starters. Whenever we visit Italian restaurants, Bruschetta is our default order. Some dishes are easy to cook and have minimal ingredients – bruschetta is one among them. Ingredients: 

Garlic Bread – 7 slices

Garlic – 2 pods, Finely Minced

Red Grape Tomatoes- 1 pint, Halved Lengthwise

Dry basil – 1 tsp (Fresh basil is preferred. Since I didn’t  have them, I used dry basil)

Salt – as needed

Italian Seasoning – 1/2 tsp (Optional)

Olive oil – 1/2 tsp

Method:

  • Add olive oil to the skillet, over medium-high heat. Add garlic and stir for about a minute. When garlic becomes golden brown, switch off the stove. Add tomato, salt and basil, give a gentle mix.  Transfer into a mixing bowl and allow to cool. Cover and refrigerate for an hour or two, if possible

  • Before serving, give the tomato mixture a final stir, and spoon generously over the slices of Garlic bread

  • I have used Grape tomatoes. You can also use chopped regular tomatoes/cherry tomatoes
  • I have tossed the tomatoes. Fresh tomatoes can be used as well

I tried this with French bread. It can be made with any other bread.

Garlic Bread

We never forget to order garlic bread while ordering pizza. Addicted to garlic bread, this is one of my favourite quick eat whenever I have French bread handy.

Garlic Bread:

Preparation Time: 5 mins | Cooking Time : 15 mins | Serves: 2

Recipe Category: Appetizers & Snacks

Ingredients:

Garlic – 2 tsp, finely minced

Unsalted butter – 3 tbsp, room temperature

Dry Basil – 1 tsp

French  bread – 1/2 Loaf (I used Garlic and Herb Bread)

Cooking Spray/Oil – to grease (I used PAM olive oil spray)

Salt – as needed

Method:

  • Preheat oven to 350°F.
  • Combine minced garlic, butter, salt and basil  in a mixing bowl. I have cut diagonal pieces like this, to allow for more surface area, about 1 inch thick. Apply the garlic-butter mix on both sides of the bread pieces

  • Cook both side for about 5-10 min each till it reaches golden brown

My Notes:

  • You can add 1 tbsp of Parmesan cheese while preparing spread
  • Instead of French bread, you can even use White/wheat/multigrain bread
  • Instead of using oven, can also girll/use skillet to cook the bread
  • Instead of basil, you can even use parsley

Apple Bagel

Bagel has became part of our Breakfast. Instead of preparing savory using bagel, I wanted to try a sweet version. Had apples in fridge so tried Apple bagel. Apple bagel is easy to prepare and it tasted Delicious.

Apple Bagel:

Preparation Time : 5 mins | Cooking Time : 10 mins | Serves : 2

Recipe Category: Breakfast

Ingredients:

Bagels – 1

Apple – 1/2 small apple, diced

Brown Sugar / White sugar – 1 tsp

Cinnamon –  1/8 tsp

Cheese – 1 tsp (I used Cheddar and mozzarella grated)

Method:

  • Combine Apple, cinnamon and Sugar in a mixing bowl

  • Top each bagel half with apple mixture and spread cheese over apple
  • Bake the bagel halves for 8-10 minutes

My Notes:

  • MICROWAVE DIRECTIONS: Top each bagel half with apple, cinnamon and sugar. Place on microwave-safe plate lined with paper towel. Microwave on HIGH for 1 to 1 1/2 minutes. Top each with cheese. Microwave on HIGH for 1 to 1 1/2 minutes or until cheese is melted and sandwich is hot
  • Adding Sugar is optional

Bagel Pizza

When we visited my brother-in-law’s place, my co-sis prepared Bagel for breakfast, that was the first time I had bagel. I liked that, and decided I should prepare bagel for breakfast. Being Pizza lovers, tried Bagel pizzas.

Bagel Pizza:

Preparation Time : 10 mins | Cooking Time : 10 mins | Serves : 2

Recipe Category: Breakfast

Ingredients:

Bagels – 2

Prego Tomato Onion Basil Pasta Sauce / pizza sauce – 1/4 cup

Grated Cheese-  3 tbsp (I used cheddar and mozzarella)

Olives – 4 tsp

Onion –  4 tsp

Yellow bell pepper – 4 tsp

Mushroom – 4 tsp

Salt as needed

Italian seasoning / pepper powder – 1/4 tsp (I used Italian seasoning)

Method:

  • Preheat the oven to 350 degrees F
  • Spread Pizza sauce (I used Prego Italian Sauce) onto both halves of the bagel. Add a layer of finely chopped onions, mushroom, bell pepper and olives. Sprinkle required salt and italian seasoning. Top with cheese

  • Bake pizzas for 8-10 minutes
